Easy Everything-But-The-Bagel Breakfast Casserole
This delicious, savory and protein-packed breakfast casserole (or any-time meal) is easy, versatile, can be made ahead + freezes well, too! Use what you have on hand and feel free to add or change veggies and seasonings to suit your own taste. It’ll keep you full and be on repeat for weekends and meal prep during the week!
Ingredients
1 dozen large eggs
1 lb cooked breakfast sausage (This is my favorite + Use code NWW for 10% off)
2 c cooked riced cauliflower (I love the super easy steamable bag ones)
1 c cooked chopped broccoli (I love using seasonal leftover veggies here)
2 c cheddar cheese (pepper jack or monterey jack work well), divided in half
1/2 c milk or heavy cream (if dairy free, use coconut milk and omit cheese)
2 tsp everything but the bagel seasoning, divided in half
salt (Use Code NWW for 10% off) and pepper to taste
Instructions
Preheat oven to 350 degrees
Whisk together eggs, milk or cream, eggs, cauliflower, broccoli, 1 c of cheese, 1 tsp EBTB seasoning, and a dash of salt and pepper
Grease a 9x9 pan and add cooked sausage to the bottom
Pour egg mixture on top and add other cup of cheese and other tsp of EBTB seasoning on top
Bake for 50-55 minutes until the eggs in the center of the casserole are done to your liking.
(Optional but my favorite part: Broil for 2 minutes to get the top brown and bubbly)
(Tip: If the top starts to brown and the center is not cooked through, cover with foil and bake for additional time)
Enjoy!
*Can be made ahead 1-2 days and then baked as usual. Freeze individual squares of casserole and reheat.
